Tonight for supper, I wanted to make a side dish using tomatoes. I had these beautiful cherry tomatoes, mozzarella cheese, and cucumbers. I simply cut all three ingredients into the same sized pieces, and added salt, pepper, and a drizzle of olive oil.
It was good, but I think I was missing something. Maybe a splash of vinegar? An herb of some sort?
Any ideas?

I think I'm hungry because my mouth is watering just looking at the wonderful fresh side dish.
I enjoy tomatoes with mozzarella, never tried mixing cucumber but it sounds a good idea.
I would add dry oregano, just like I do with cheese & tomatoes only.
Looks so good! Maybe try italian dressing. Makes me hungry!
A squirt of lemon perhaps. Delicious and healthy snacking nonetheless!

Dawn ~ I put Italian dressing on my cucumbers when I slice them by themselves, and it's yummy. I was just trying something different...thanks for the tip, though. :)

I make tomato and mozzarella with fresh basil, extra virgin olive oil and balsamic vinegar. Not sure if it will translate well to cucumbers, but it might! I'm going to add some cukes next time I make the salad and see how it turns out. :) Your photo looks so yummy!

Not oregano - basil! and just a teeny drop of balsamic vinegar.

I love how different people have different recipes. I wonder which one I will like best. I have more stuff so maybe I'll throw some together tomorrow.
